BBQ Foil Potato Packs

It’s summer time, and the temperatures are rising fast. It’s a time when our family counts on our grill for making meals. Who wants to heat up the house making a big dinner? Steaks, pork chops, chicken. Almost any meat can be grilled, but then you still need a side. My husband loves his potatoes, but they can take so long to grill!

I have a great time saving method that opens up a world of possibilities: Foil Potato Packs! These are so easy, and only take 30 minutes on the grill!

The recipe is below, but you can customize the flavors as much as you want. Try lemon and dill for a greek flare, rosemary and oregano, or anything you can think up!

BBQ Foil Potato Packs

BBQ Foil Potato Packs


  • 2 medium potatoes
  • 1/2 cup onion, diced
  • 2 tbls green onion
  • 1 clove garlic, minced
  • 1 tsp salt
  • 2 tsp pepper
  • 1/4 cup butter divided
  • 1/2 bacon bits or chopped cooked bacon (optional)
  • 1/2 cup water


  1. Start with a rectangular piece of aluminum foil about 12-18 inches long, and 8 inches wide. Grease the foil liberally.
  2. Put all of the ingredients except the water in the foil. You want to keep everything in the middle, running length wise in the foil, so you can create a pocket.
  3. Fold the small sides in. Then fold the long sides in together and fold them over to one side creating your pocket.
  4. Place your pocket on the grill opening the pocket slightly for venting. If needed, add a little water to keep hydrated and create steam. Cook for 30 minutes.
  5. Top with sour cream and grated cheese
