Low-Calorie Power Pancake Recipe

Did you know that today is Pancake Day? Well, it is! In honour of Pancake Day, I wanted to share my Healthy Low-Calorie  Power Pancake recipe with you!

Eating healthy doesn’t mean you have to make sacrifices. This recipe is quick and easy to make and kid friendly. My kids love these pancakes almost as much as traditional pancakes!

Low Calorie Power Pancakes

Yield: 1

Serving Size: 1 medium pancake

Calories per serving: 175

Fat per serving: 4 g

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp roasted flax seeds
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 4 egg whites (1/2 cup)

Instructions

  1. Using a blender or food processor grind the oats, flax seeds and cinnamon into a flour like consistency. I use my magic bullet using the whipping blade and it only takes a few seconds. Add the vanilla and egg whites.
  2. Pour into a preheated frying pan as you would any pancake. I like to use a bitt of coconut oil in the pan so they don't stick. No stick pans don't always stay no stick, right? Fry on medium high heat until bubble begin to form and flip. Continue cooking until lightly browned.
  3. Serve with sugar free syrup and/or assorted berries.

You can make so many variations to this recipe. Change out the spices to app different flavours. If you want more healthy fats in your diet, try using 2 whole eggs instead of egg whites. The possibilities are endless!
