Roasted Tomato Salsa Recipe

In my house, the favourite condiment is salsa. I use it in and on most of my dishes. I love home made salsa, and was blessed with a massive abundance of garden tomatoes this year. So I experimented, and found a new way to make salsa that has everyone drooling. Roasted Tomato Salsa.

Roasting the veggies brings out a sweetness that compliments the spice perfectly. The best part is it was so easy!

First, wash your veggies. Kind of a no brainer, right?

Then drizzle olive oil over your veggie choices. I used 14 Roma tomatoes, a yellow pepper, 1 onion, 1 clove of garlic, and 1 chilli pepper. Add what ever you like in your salsa. Feel free to experiment!


Now roast at 450 degrees for 10 minutes. Turn the veggies over and roast for an additional 5 minutes. You want them to be slightly chard on the outside.IMG_0186 IMG_0188

Let the vegetables cool for 5 minutes, and quarter the pepper and onion.

Add the roasted vegetables to your food processor with 1 tsp salt, 2 Tbsp lime juice, and 2 Tbsp cilantro.IMG_0190Pulse until everything is at the desired consistency. For me that was 4 brief pulses. Now pour into your jars. You can easily can this salsa, or store in the fridge for up to 1 week.
