Sneaky Spaghetti

If you have a garden, you are looking for ways to use up all your veggies before they go bad. My big one is zucchini. What to do with it all? Well, my Sneaky Spaghetti helps you use up that zucchini and also dresses up a family classic. It’s thrifty because the ingredients are probably all on hand, and it gets veggies into those picky kids. I can’t think of any kids who don’t love spaghetti!


  • spaghetti noodles
  • 1-2 lb. ground beef depending on your family size
  • 1 onion, diced
  • 1 jar tomato sauce
  • 1 small jar salsa (easy substitution- 1 can diced tomatoes, lime juice,1/4 tsp cumin, 1 tsp chilli powder, 1 tsp chopped fresh cilantro )
  • 1 cup grated zucchini
  • 1/2 cup cream cheese


Bring a pot of water to a boil.

Brown ground beef and onions. Drain any fat.

Add tomato sauce, salsa (or tomato mixture) and zucchini to a pot. Simmer 15-30 minutes.

20130917-210803.jpgWhen your water is boiling, add spaghetti noodles. The general rule of thumb is one small handful per adult serving. Cook spaghetti noodles according to package direction, 8 minutes or so. Drain spaghetti.

Add cream cheese to sauce and mix well while it melts.



No mix sauce with spaghetti noodles. The zucchini blends right in. Even my Little E who HATES vegetables can’t tell it’s in there.

There you have it. I new twist on spaghetti, a classic family dish. Enjoy!

    Salsa is really great in meatloaf and I add shreded carrots and veggies to alot of foods. Abagail loves veggies though and eats them right out of the garden. She’s so proud when we have them for dinner and she watered and picked them, lol. This looks interesting and I would have never tried it, but I will now
