Thrifty Lunch Ideas

Life as a stay at home mom can get boring some times. The days blur together, and I need to find ways to dress up our meals. I can get so sick of Mac and Cheese and sandwiches. So I have been looking at different thrifty lunches I can make for my handful. First on the list: Pita Pizzas!
Simple, quick, and all with ingredients that are easy to have available.

Ingredients:

Pita bread (You can make your own, or visit local bakeries and bread stores. Look for the day old sales and freeze. Pita bread will freeze for 2-3 months)

Tomato Sause

Grated cheese

Any desired toppings

 

Directions:

Preheat your oven to 350. Place your pitas on a cookie sheet and spread tomato sauce around the middle of the pita. Leave about one inch around the edge for the crust.

Next step, sprinkle 1/4 to 1/2 cup shredded mozzarella cheese over each pita pizza.

20131023-235625.jpgNow add any addition toppings. This was an extra thrifty week, so we just did plain cheese today.

Now bake your pita pizza for 20 minutes.

Slice into pizza slices and serve! The kids love them, and I love the variety. Enjoy!

  6. We made pita pizzas when we went camping on a frying pan. Not quite as good as when cooked under a broiler. But so easy and yummy too.
