Using Up All That Zucchini & Muffin Recipe

Zucchini is one of those vegetables that grows so well people is always giving it away! We have so much right now, and finding different ideas to use all that zucchini up can be challenging. Part of being thrifty is using what you have on hand, so creativity comes in handy!

Zucchini is a good source of vitamin C, folate, and potassium. So including it in your families diets is a healthy choice.

So now to the matter at hand. What do you do with it all?

Try grating it. Grated zucchini is very handy. It makes amazing cakes, muffins, bread and more. It keeps everything moist and delicious! Add it to meat loaves, sauces and casseroles, and stir-fries.

Surprisingly, zucchini freezes very well. I always measure out 2 cups for every freezer bag to make it easy for recipes.

Now for the fun part, a recipe to try!

Pineapple Zucchini Bread

Ingredients

  • 3 eggs
  • 2 cups shredded zucchini
  • 1 cup vegetable oil
  • 1 can (8 ounces) crushed pineapple, drained
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 3/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1 cup chopped nuts
  • 1 cup raisins, optional

Directions

  • Combine the eggs, zucchini, oil, pineapple and vanilla. Mix the dry ingredients; stir into egg mixture just until moistened. Fold in nuts and raisins.
  • Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 50-60 minutes or until a toothpick inserted near the centre comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool.

These loaves are eaten up in my house as fast as I can make them. Enjoy!

    I am also swamped with squash! I will have to try freezing, I have never tried that before. I add it to everything, spag. soup. meatloaf, breads and simple pastas and still have more, ha ha

  4. Thank you for the post on what to do with excess zucchini! I found out I loved zucchini when I was preggers with my second child and Carl’s Jr. Messed up my I order by putting fried zucchini in my bag instead of onion rings. I ate it anyway and was hooked! (Happy accident!) I am so going to try your recipe for the bread, leaving out the pineapple because I’m allergic. It looks yummy!
