No-Bake Individual Eggnog Cheesecake

As soon as November hits, the stores start decorating for the holidays. One of the first signs the Christmas season is coming is eggnog hitting the stores. There is something about the flavor of eggnog that screams Christmas time!

One of my indulgences this time of year is eggnog anything! I am nuts for eggnog flavors. I am also a sucker for cheesecake,  but I don’t always have the time to bake them. Plus, how do you just eat a tiny slice of something so good?

That’s why I love these no-bake eggnog cheesecakes. Make them in advance for a holiday gathering, or just to enjoy after a long day. The prep time is the same, but you get to walk away! The best part is the crust. It is made with Cheerios, so it is completely gluten free and tastes amazing!

I made these in 8-ounce glasses, but this recipe can be made in anything! Try  small mason jars, or even wine glasses. The possibilities are endless.


Individual Nobake Eggnog Cheesecake Recipe

Ingredients

    For The Base
  • 1 cup Honey Nut or Multi Grain Cheerios
  • 2 Tbsp Butter, melted
  • 1/2 cup Brown Sugar
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • For The Filling
  • 1 1/2 cup Cream Cheese, softened at room temperature
  • 1/2 cup Icing Sugar
  • 1/3 cup Eggnog
  • 1 1/2 cup Whipping Cream
  • 1/4 tsp Nutmeg
  • 1/8 tsp Cinnamon

Instructions

    The Base
  1. Take your Cheerios, brown sugar, nutmeg and cinnamon and pulse in a food processor until the Cheerios are crumbs. Add the meted butter and pulse until well mixed. Press the base mixture into your serving cups and place in the fridge while you start on the filling.
  2. The Filling
  3. Beat the cream cheese and sugar with an electric mixture until creamed. Add Eggnog and mix until just blended.
  4. Now whip the Whipping Cream with the remaining nutmeg, cinnamon and icing sugar until stiff peaks appear. If you prefer, you can use cool whip, but there is nothing like the real stuff!
  5. Now fold the whip cream mixture into the cream cheese mixture.
  6. Add to your serving cups and refrigerate 3-4 hours to set. Garnish with additional whipping cream, cinnamon sticks or nutmeg if desired.

I love all the flavors coming together, and with a little garnishing, these look super fancy. Try using a frosting tip and piping bag for an extra touch of elegance. No matter how many times I try, my piping bag experiments always look amateur. I think my children could do a better job than me!

Each recipe can make at least 4 individual eggnog cheesecakes, depending on your container choice.
